Granny Squares (above, top right) - Multi-color blocks tied together with a solid color edging. There are infinite variations, but here is a beginner granny square tutorial we love from Sarah Maker.
Granny Stripes (above, background/left) - Use every inch of leftover yarns, or combine all your favorite colors in one place. Here is a great granny stripe tutorial from Attic 24.
Or, get fancy with two-color medallions of a Marguerite Blanket by Sandra Eng. This is a more advanced pattern that creates a truly stunning finished blanket.
